Ingredients
4 slices cinnamon raisin bread,
toasted and cut into 1/2-inch pieces
1 large Granny Smith apple, peeled,
cored, and finely chopped
1/2 ounce pecan halves, coarsely chopped
1 1/2 cups lowfat (1%) milk
2 eggs
2 egg whites
1 tablespoon plus 1 teaspoon light brown
sugar
1 teaspoon vanilla
1/8 teaspoon confectioners' sugar
Instructions
1 Preheat the oven to 350 degrees. Spray four 1-cup ramekins or baking dishes with nonstick cooking spray. In a medium bowl, combine the bread and apple. Spoon the mixture into the prepared gratin dishes and sprinkle the nuts evenly on top.
2 In a large measuring cup, whisk together the milk, whole eggs, egg whites, brown sugar, vanilla, and nutmeg until well combined
3 Pour the milk mixture evenly over the bread mixture in the gratin dishes. Let stand for 15 minutes at room temperature to allow the bread to absorb the milk mixture.
4 Place the gratin dishes on a baking sheet and bake until golden brown and set, about 25 minutes. Sprinkle evenly with the confectioners' sugar and serve hot or at room temperature.
