Makes: 4 servings
Ingredients
1 large egg
1 egg white
2 tablespoons frozen orange juice
concentrate
1/2 teaspoon vanilla extract
4 ounces French bread, preferably
whole wheat, cut into 8 equal slices
1 1/2 cups sliced strawberries
1/2 cup orange sections
1 tablespoon orange liqueur
2 reaspoons confectioners' sugar
Instructions
1 Preheat the oven to 425 degrees. Spray a nonstick baking sheet lightly with nonstick cooking spray
2 In a shallow bowl, beat the whole egg, egg white, orange juice concentrate, and vanilla extract until well blended.
3 Dip each slice of bread into the egg mixture and coat well on both sides. Place the bread on the prepared baking sheet.
4 Bake the french toast for 8 to 10 minutes, or until the bottoms are lightly browned. Turn the slices over and continue baking for 2 to 3 minutes, or until the second sides are browned
5 Meanwhile, in a medium bowl, combine the strawberries, oranges, and orange liqueur and toss gently.
6 To serve, place 2 slices of French toast and one-fourth of the fruit on each of 4 plates. Dust each serving with 1/2 teaspoon of the confectioners' sugar.
