Little Golden Packages

Time: 30 minutes
Makes: 30 packages

Ingredients

1 garlic clove,crushed
1 tsp chopped cilantro root
1 tsp pepper
1 cup mashed potato
1 cup finely chopped water
chestnuts
1 tsp grated fresh ginger
2 tbsp ground roasted peanuts
2 tsp light soy sauce
1/2 tsp salt
1/2 tsp sugar
30 wanton skins,defrosted
1 tsp cornstarch paste (see
Corn and Crab Soup recipe)
Vegetable oil,for deep-frying
Fresh chives,to garnish
Sweet chili sauce,to serve

Instructions

1. Combine all the ingredients thoroughly,except the wanton skins, cornstarch paste,and oil.
2. Keeping the rest of the wonton skins covered a damp cloth,lay 4 skins out on a work counter.
3. put a teaspoonful of the mixture on each wonton skin.
4. Make a line of the cornstarch paste around each skin,about 1/2 inch from the edge.
5. For each skin,bring all 4 corners to the center and press together to form a little bag.
6. Meanwhile,heat 2 inches of the vegetable oil in a deep saucepan until a light haze appears on the top. Lower the wonton packages in,in batches of 3. Fry until golden brown,remove with a perforated spoon,and drain on paper towels.
7. Tie a chive around the neck of each package to garnish,and serve with the sweet chili sauce for dipping.
