YELLOW SQUASH CASSEROLE

4 cups yellow squash -cubed
1 cup chopped onion
1 stack Ritz (or any buttered ) crackers -crushed
1 cup grated cheddar or colby cheese
2 eggs
1 tsp salt
pepper
1/4 stick margarine or butter
1/2 cup milk

Cook squash and onion until tender; drain. In another bowl put crushed crackers and cheese - set aside. Beat eggs and milk together, add  to squash mixture. Add melted butter and 1/2 of the cracker and cheese mixture. Pour into a long or oval casserole dish . Cover top with remaining cracker and cheese mixture. Bake in 400 degree oven for 20 to 25 min. uncovered.
