TGI Friday's POTATO SKINS
4 medium russet potatoes 1/4 C of butter, melted 1/3 C sour cream 1-1/2 C shredded Cheddar cheese 1 tsp. snipped chives or green onion tops 5 slices bacon, cook & crumbled
Pre-heat oven to 400. Bake potatoes in microwave until they are soft, or in oven for 1 hour. As potatoes are baking, make sour cream dip by mixing sour cream & chives oronions. Mix together & place in refrigerator to chill. When the potatoes are cool enough to handle, make 2 lengthwise cuts thru each potato, resulting in 3 slices that are 1/2 inchwide. Discard the middle slices or save for mashed potatoes. This will leave you with 2 potato skins from each potato (8 in all). With a spoon scoop out most the potato from the skin, leaving about 1/4 inch of potato in the skin. Brush the entire surface of the potato, inside & out, with the melted butter. Place the skins on a cookie sheet, cut side up. Turn the oven temperature up to broil. Broil for 6 � 8 minutes. Place 2 � 3 T. of cheese on each skin. Sprinkle with 2 tsps of bacon. Broil the skins for 2 more minutes, or until the cheese is melted. Serve hot on a plate, with sour cream dip in the middle of the plate. Serves 2. |
