QUICK BASIC FUDGE
2 cups granulated sugar 2/3 cup canned evaporated skim milk 1/2 cup unsalted butter 12 large marshmallows Pinch of salt 1 6-ounce package semisweet chocolate morsels 1 cup chopped pecans 1 teaspoon vanilla extract
Combine the sugar, evaporated milk, butter, marshmallows and salt in a large, heavy-bottomed saucepan. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil for five minutes, stirring constantly. Remove from heat and stir in the chocolate morsels. Add pecans and vanilla and pour into a buttered 8-inch square pan. Cool and cut into squares.
Rocky Road Variation: Omit the pecans. When you remove the fudge from the heat and after you have stirred in the vanilla extract, stir in 1/2 cup mini marshmallows and 1/2 cup chopped peanuts. |
