PINEAPPLE-ORANGE SUNSHINE CAKE
(makes 16 servings)

*Everyone will love this cake - and they won't even have a clue that it's LOW-FAT :-)

Cake:
1 box Sweet Rewards yellow cake mix
3/4 c applesauce
4 eggs
1 can (11 oz) mandarin oranges in light syrup

Frosting:
1 container (8 oz) light whipped topping, thawed
1 pkg (3.4 oz) instant vanilla pudding mix
1 can (15.5 oz) crushed pineapple juice

1. For the cake: Preheat oven to 350 F. In a large bowl, stir together all cake ingredients until moist. Beat by hand for 2 minutes.

2. Coat a 9x13-in. cake pan with nonstick spray. Pour batter into pan. Bake 30-40 minutes or until a toothpick inserted in the center comes out clean. Cool completely.

3. For the frosting: In a large bowl, mix together all frosting ingredients until well blended. Spread over cake. Store in refrigerator.
