PEACHES & CREAM CHEESECAKE
3/4 C. flour 1 tsp. baking powder 1 small pkg. vanilla pudding mix (NOT INSTANT) 3 T. softened butter 1 egg 1/2 C. milk 1-20 oz. can sliced peaches, drained, reserve juice 8 oz. cream cheese, softened 1/2 C. sugar 3 T. reserved peach juice 1 T. sugar 1/2 tsp. cinnamon
Combine flour, baking powder, salt and dry pudding mix in a bowl. Add butter, egg and milk. Beat 2 minutes at medium speed. Pour into greased 9 or 10" square pan. Place drained, sliced peaches over batter to 1" from edge of pan. Combine cream cheese, sugar and 3 tablespoons reserved juice in small bowl. Beat 2 minutes at medium speed. Spoon over peaches. Combine sugar and cinnamon; sprinkle over top. Bake at 350 for 30 to 35 minutes until golden brown. Cool. Store in refrigerator.Makes 9 servings. |
