MOM'S RANCH CHICKEN 2 Cups finely crushed corn flakes 1 Cup Parmesan Cheese (Kraft type, not fresh) 1 pkg dry Hidden Valley ranch dressing
Mix above ingredients well & place in shallow dish. Melt 1/2 Cup margarine, dip cut up chicken pieces in margarine and roll in crumb mixture. Place on baking sheet and put into 325 degree oven for 35 to 45 minutes (depending on your oven and thickness of chicken parts). This works equally well with breast filets but reduce cooking time. For a lower fat version: omit dressing mix from crumbs & cheese, dip chicken in low fat bottled Ranch dressing, almost the same taste and less fat, esp. if you use boneless skinless breasts. *It's one of my kids favorites, and it's fairly easy. I made it for my son's wedding reception too, so you can see its pretty flexible: can be double, triple whatever. Carol |
