MACAROON FILLED BROWNIES
*This is my $300.00 winning recipe for the June or July 2000 issue of COUNTY WOMAN magazine. It had to be entered in my daughter-in-law's name for some reason. They said since I had won before they wanted to put this one in another family member's name if possible. It sounds to me like if you win once you don't win again, but they had all ready notified me of the win, so they called me and asked if I could give them another family member's name to put it in, so that is why if you look in the magazine you will see Christine Foust and not Nancy Foust! :-)
l c. oleo 2 c. sugar 4 eggs, slightly beaten l/2 c. chopped walnuts l/2 c. cocoa 2 c. flour l/2 tsp. cream of tartar l tsp. vanilla
FILLING: l - l4 oz. coconut 2 tsp. vanilla l - l4 oz. can sweetened condensed milk
FROSTING: l c. miniature marshmallows 3/4 c. sugar l/4 c. milk 2 T. oleo l c. chocolate chips l tsp. vanilla
Cream oleo, add beaten eggs and sugar, mix well. Add nuts, cocoa, flour, cream of tartar and vanilla, mix well. Put in half of brownie batter in a greased 9 x l3 pan. Mix filling ingredients and spread over brownie batter. Cover with leftover brownie batter. Bake for 30 minutes at 350 degrees.
FROSTING: Put marshmallows, sugar, milk and oleo in a double boiler. Heat until melted and syrupy. Remove from heat and add chocolate chips and vanilla. Stir until chips are melted and frosting is spreading consistency. (I put mine in the microwave and melt everything.) Makes 36 bars. |
