MACADAMIA NUT CREAM PIE 1 1/3 C milk 1/2 C sugar 3/4 C chopped macadamia nuts 1/2 tsp salt drop of yellow food coloring 1/2 tsp vanilla 1/3 C milk 1 egg 1 Tbs cornstarch 1/3 C egg whites 1 10" baked pie shell
Mix 1 C milk, 1/4 C sugar, nuts, salt, food coloring, and vanilla, in a double boiler; heat to simmering over boiling water. Combine 1/3 C milk, 1 egg, and cornstarch. Add to nut mixture and mix thoroughly. Cook until thickened. Immediately fold in egg whites beaten with remaining sugar. Spoon into pie shell; Chill. Top with whipped cream and sprinkle generously with chopped nuts. Yields 8 servings. |
