HOT GERMAN POTATO SALAD

1 lb bacon, cut into 1" pieces
1/2 C vinegar
1/2 C water
1/3 C sugar
6 potatoes peeled, cooked & sliced
1 onion
1 Tbs. flour
2 stalks of celery thinly sliced
salt and pepper to taste

Place potatoes in large bowl after cooking slicing, etc. and set aside. Cook bacon in large skillet on medium heat to desired crispness. Remove bacon and drain. Save 2 Tbs. drippings. Add onion, celery & drippings to skillet and cook and stir until celery is tender & crisp. Blend in flour. Stir in water, vinegar, salt & pepper, sugar and bacon. Bring to a boil. Cook on medium heat 5 minutes or until it becomes thickened, stirring occasionally. Gently mix in bowl with potatoes.
