COUNTRY COMFORT CHOWDER
Here's another quick one...one of the soups I make for the restaurants here...its wonderful...if I do say so myself!!!
8 lg. potatoes, cut into chunks 1 sm. pkg. baby carrots, cut into chunks 1/2 bunch of celery...sliced into thick pieces 2 lg. onions, coarsely chopped 4 cups ham...cut into chunks 6 chicken bouillon cubes 2 qts water salt and pepper to taste 1 8 oz. pkg. cottage cheese 1 16 oz. pkg. shredded cheddar 1 tsp. ham flavored base corn starch
Put first 8 ingredients in a 4 qt. dutch oven, or soup pot. simmer over medium heat until veggies are just tender. Add the cottage cheese, stirring constantly until melted. add the ham base, and the cheddar cheese, stirring until blended. mix approximately 6 tbsps. corn starch with a small amount of water to make a thick mix. Slowly pour into soup, stirring constantly, till thick. serve with hot biscuits or rolls....and enjoy. This soup refrigerates well..but doesn't freeze..You might notice tho, that upon reheating, it gets thicker..Add more chicken broth or a little milk to thin it back out. *S* Makes 4 qts. of soup. |
