CHICKEN PASTA SALAD
                    
1 lb. of boneless chicken breasts
grilled chicken marinade (you can make your own or I use Durkee Grill Creations for Chicken)
1 lb. of tri color rotini - cooked and rinsed
1/2 cup chopped carrots
1/2 cup sliced celery
chopped tomato
1 chopped cucumber
1 small bunch of scallions (green onions/spring onions), sliced
2 bottles of lowfat balsamic vinaigrette dressing
salt and pepper to taste
Optional:  diced or shredded cheese
any other veggies you'd like to add
                    
Marinate the chicken for about 1/2 hour.  Prepare your grill.  Cook the chicken over medium heat until done.  You can also do this in a wok on the stove top if you'd like. After the chicken is cooked, shred or dice it into bite size pieces. In a large bowl combine all ingredients. Put in the fridge for a couple of hours and enjoy. This is reasonably low-fat if you use lowfat dressing and omit the cheese.  I usually bring it to bar-b-q's and it serves a lot of people.  An estimate of servings is 6 - 8 as a side dish.
