CHOCOLATE CHIP RUM CAKE 1 yellow cake mix....Duncan Hines 1 small INSTANT chocolate pudding 4 eggs 1 Cup sour cream 1 Cup oil 1 teaspoon vanilla 4 Tablespoons rum...light, dark, cheap, expensive..doesn't matter 1 Cup REAL chocolate chips Mix all together (except choc. chips) , fold in chocolate chips. Pour into bundt pan and bake 350 for 50 minutes. It will stay moist for a LONG time if you don't eat it up. Can dust it with powdered sugar or I use a glaze...see below. Glaze: 2 Tablespoons of cocoa 1 Tablespoon + 1 teaspoon water 1 Tablespoon butter or oil 1 Tablespoon white corn syrup 1 Cup Powdered Sugar Heat, stirring until mixed and then add 1 Cup powdered sugar. Stir over low heat until sugar is mixed good and dissolved. Drizzle over cake. |
