ARIZONA CHICKEN CHILI
3 boneless, skinless chicken breasts, diced 1 cn (14.5oz) diced tomatoes with green peppers and onions 1 tbsp chili powder 1 cn (15.25oz) black beans or kidney beans, drained 1 cn (15.25oz) whole kernel corn, drained 1/4 c chopped cilantro or sliced green onions
Combine chicken, tomatoes and chili powder in medium saucepan. Cook over medium heat for 5 minutes or until chicken is done and sauce is slightly thickened. Add remaining ingredients and simmer 5-7 minutes or until heated through. Garnish with shredded Monterey Jack cheese, diced avocado, radishes or green onions. |
