ALMOST CLASSIC MEAT LOAF
2 C. shredded hash brown potatoes 1 C. Italian-seasoned bread crumbs 1 C. chopped onion 1/2 C. ketchup 1/4 C. Dijon mustard 2 tsp. dried oregano 1/2 tsp. salt 2 large eggs, lightly beaten 2 garlic cloves, minced 2 lbs. lean ground beef cooking spray 1/3 C. ketchup
Preheat oven to 375 F. Combine potatoes, bread crumbs, onion, ketchup, mustard, oregano, salt, eggs and garlic in a large bowl and stir mixture well. Crumble ground beef over potato mixture and stir until just blended. Shape mixture into an 81/2-by-41/2 inch loaf. Place loaf in an 11by7 inch baking dish coated with cooking spray. Spread 1/3 cup ketchup over the top of loaf. Bake at 375 F for 1 hour and 15 minutes or until and instant-read thermometer registers 160 F. Let stand 5 minutes before slicing. |
