Split Pea Whip
4 oz. uncooked green or yellow split peas
1/2 cup chopped carrot
1/4 cup chopped onion
1 tblsp. margarine
1 tsp. salt
1 bay leaf
2 cups water
1/2 cup evaporated skimmed milk
1 tblsp. firmly packed light brown sugar
1 tblsp. lemon juice
1/2 tsp almond extract
In a 1 1/2 qt. saucepan combine first 6 ingredients; add water and bring mixture to a boilover high heat. Reduce heat to low; cover and simmer until peas are soft and most of the water has been absorbed, about 40 minutes.
Cool mixture slightly, then transfer to work bowl of food processor. Add remaining ingredients and process until mixture is smooth. Transfer to serving dish and garnish with julienne-cut carrot.
