Southern Fried Chicken


1/3 c. all-purpose flour
1 tsp. paprika
1 tsp. salt
1 tblsp. pepper
2 1/2 - 3 lb. broiler chicken, cut-up
2 eggs
shortening for frying


Combine flour, salt, pepper, and paprika in a plastic bag or large bowl; beat eggs in bowl and dip chicken in eggs. Place chicken in flour mixture one piece at a time and coat thoroughly. Heat shortening on medium-high heat in 1/4" deep skillet. Brown pieces on both sides (about 15 to 20 minutes), reduce heat to low and cover tightly. Cook 30 - 40 minutes, or until tender. Uncover the last 10 minutes of cooking time.
