      Title: Tante Sophie's Apfelsalat (Aunt Sophie's Apple Salad)

      Yield: 1 Recipe
 
      6    Apples
      2    Egg yolks; beaten
      1 ts Lemon juice
    1/2 ts Salt
    1/2 ts White pepper
      1 ts Mustard
      1 tb Vinegar
      1 tb Sugar
      1 c  Cream
 
  :    Peel and dice apples.  Make a mixture of yolds, lemon juice,
  salt, pepper, mustard, vinegar, and sugar.  Heat over a slow fire
  until it begins to boil, stirring constantly.  Then add cream.  Beat
  until it is cool. Pour mixture over apples and mix thoroughly.
