MMMMM----- Recipe via UNREGISTERED Meal-Master (tm) v8.05 Title: Stritzeis (Potato cakes) Categories: Potato, Breakfast Yield: 1 Servings 2 c Cold Mashed Potato Milk & Butter included in The Mashed potato 1 Medium Onion Finely Chopped 3 tb Plain Flour 2 ts Dried parsley 2 or 3 Eggs this is the iffy part, I add the eggs till the mixture is goopy enough. Finely mash the cold potatoes with a fork. Sprinkle the flour and dried parsley over the potatoes,add the onions, and mix into the potatoes. Salt and pepper the mixture well. Add the eggs, and mix till smooth with the fork. In a frying pan, heat solid vegetable Fat untill hot but not smoking. With a large serving spoon, drop the spoonful of the mixture into the fat. The fat should be just deep enough the mixture doesn't float. Flatten the mixture out slightly. Fry till golden brown. When you go to flip them, use a spatula underneath, and another one to flip it onto, and then slid it back into the fat. If you don't do this, they break very easily. Fry the other side till golden brown. Make sure they are done in the middle before removing them. The center should be set, and not runny.I usually fry about 6 at a time. We usually seve Ketchup with these. They are excellent served with pork chops or steak but we love them for Breakfast with Bacon, Sausage & Eggs I hope you enjoy these.
