MMMMM----- Recipe via UNREGISTERED Meal-Master (tm) v8.05 Title: Wriezener Makrelen (Poached mackerel with herbs) Categories: German, Fish, Wine Yield: 4 Servings 4 Whole mackerel, cleaned 1 tb Vinegar 1 ts Salt 1/4 ts Black pepper 1 Onion, quartered 1/2 c Water 1 c White wine 3 Peppercorns, crushed 1/2 Bayleaf 1 Whole clove 1/2 ts Thyme 2 tb Cornflour 1/4 c Water 1/2 c Cream 2 tb Margarine or butter 1 1/2 tb Chives, chopped 1 1/2 tb Parsley, chopped Sprinkle fish with vinegar, salt & pepper. In large skillet mix onion, water, wine peppercorns, bay leaf, clove & thyme. Bring to boil, carefully add fish, reduce heat and cover. Poach for 15-20 minutes or until fish flakes. Remove fish and keep warm. Strain fish broth, measure 1 cup. Return to skillet. Blend cornflour into cold water, add fish broth. Cook until thickened and clear. Stir in cream, margarine, chives & parsley. Serve hot over fish. MMMMM
