MMMMM----- Recipe via UNREGISTERED Meal-Master (tm) v8.05 Title: LEBKUCHEN 1 Categories: German, Cake Yield: 1 Cake 2 tb Softened butter 2 1/4 c Flour 1/2 ts Baking powder 1/2 ts Ground cloves 1/4 ts Ground nutmeg 1/2 ts Cinnamon 1 c Ground almonds 2 Eggs 2 tb Finely chopped candied -lemon peel 2 tb Finely chopped candied -orange peel 1/2 c Sugar 1 c Honey 1/2 c Milk MMMMM------------------------ALMOND GLAZE----------------------------- 2 tb Cold water 1 ts Lemon juice 1 ts Rum 1/2 ts Almond extract 1 c Confectionary sugar I use an 11 x 17 " jelly-roll pan and coat the bottom and sides of pan with shortening. Sprinkle 2 tbsp of flour evenly over the shortening & tip pan from side to side to coat evenly. Then invert pan and rap it sharply on edge to remove excess flour.Set aside. Preheat oven to 400~ Sift the flour, baking powder, cloves, cinnamon and nutmeg into large bowl. Stir in the almonds, orange peel and lemon peel. With whisk (I use elec mixer) beat the eggs and sugar together until the mixture is thick enough to gall back on itself in a slowly dissolving ribbon when the beaters are lifted. Beat in the honey; then the milk and finally a little at a time, the flour mixture. When the batter is smooth, spread out evenly in prepared jelly-roll pan Bake in center of oven for 12-15 min. or until the cake is firm to the touch. With knife or metal spatula, loosen the sides of the cake from the pan and turn it out on to a cooling rack. While it is still warm, brush the top with a thin coating of the glaze. Let it set for a min. or so, and then cut the cake into 2-1/2" x 1-1/2" cookies. Can be stored up to 8 weeks in tightly sealed jars or tins (sure it can......not in this house!!!) Almond Glaze: mix in a bowl, 2 tbsp cold water, 1 tsp lemon juice, 1 tsp rum, 1/2 tsp almond extract and 1 C confec. sugar. Beat until smooth. MMMMM
