INGREDIENTS
- 250g Plain Flour (10oz)
- 1/2 tsp Salt
- 1/2 tsp Ground Black Pepper
- 1/2 tsp Aniseed Powder
- 1/2 tsp Ground Cinnamon
- 1/4 tsp Baking Soda
- 1/4 tsp Ground Allspice
- 1/4 tsp Ground Nutmeg
- 1/8 tsp Ground Cloves
- 100g Butter: At room temp. (4oz)
- 175g Soft Brown Sugar (6oz)
- 50ml Molasses (2floz)
- 1 Egg
- 225g Caster Sugar (8oz)

METHOD Firstly,
sift into a bowl the Flour, Salt, Pepper,
Aniseed, Cinnamon, Baking Soda, Allspice, Nutmeg,
and Cloves.
In a second bowl, beat together (using wooden spoon
or electric mixer) the Butter, Brown Sugar, and
Molasses until light and fluffy.
Next add the egg, and then mix in the Flour mixture. To
the second bowl.
Cover and put in the fridge.
Preheat oven to Gas Mark 4, 350°F, 180°C
Butter 2 baking Sheets.
Roll dough into 1/2 inch diameter balls.
Place balls onto baking sheet 2 inches apart.
Bake in centre of oven until golden brown and firm to
touch. (approx 14 mins)
Remove from oven and leave to cool slightly.
Coat with Castor Sugar while warm, then place on cooling
rack until cold.
