Fresh Mushroom Soup Makes 6 to 8 servings: -------------------------------------------------------- 1/4-cup butter or margarine 4 1/2-cups sliced fresh mushrooms 1 to 2-cloves of garlic,minced 1/4-cup all purpose flour 2-cups chicken broth 2-cups milk 1/2-cup snipped parsley 1/4-teaspoon salt 1/8-teaspoon ground nutmeg 1/8-teaspoon pepper 3-tablespoons dry vermouth(optional) -------------------------------------------------------- *1* In a large saucepan,melt the butter or margarine.Add the mushrooms and garlic to the saucepan;cook and stir for 5 minutes. *2* Stir in the flour,blending well.Slowly add the broth, followed by the milk.Bring to a boil,stirring constantly. *3* Reduce the heat and simmer for 5 minutes.Add the parsley, salt,nutmeg and pepper.Add the vermouth,if desired,and cook until the mixture is heated through. --------------------------------------------------------
