Crab Soup Makes 4 servings: -------------------------------------------------------- 1/4-cup butter or margarine(1/2 stick) 1/4-cup chopped celery 1/4-cup all purpose flour 6-drops hot pepper sauce 5-cups skim milk 16-ounces fresh or imitation crab meat(3 1/2 cups) 1/4-cup sliced scallions -------------------------------------------------------- *1* In a large saucepan,melt the butter over medium heat.Add the celery and cook for 3 minutes,stirring often,until crisp-tender.Add the flour and stir over low heat until frothy. Cook for about 3 minutes,stirring often to prevent browning. Add the hot pepper sauce. *2* Gradually stir in the milk.Increase the heat to medium and bring the mixture to a boil.Immediately reduce the heat so the sauce simmers. *3* Add the crab meat,return to a simmer and cook for about 3 minutes or until the crab is heated through.Stir in the scallions and serve right away. --------------------------------------------------------
