Turkey Scaloppine with parmesan cheese Makes 4 servings: -------------------------------------------------------- 4-3 ounce turkey breast slices,1/4 inch thick 1/4-cup all purpose flour 1/8-teaspoon salt 1/8-teaspoon pepper 1-egg 2-tablespoons water 1-cup fresh bread crumbs 1/2-cup freshly grated parmesan cheese 1/4-cup butter or margarine Snipped parsley -------------------------------------------------------- *1* Rinse the turkey slices and pat them dry. *2* Stir together the flour,salt and pepper in a shallow dish. *3* In a second shallow dish,beat together the egg and water. *4* In a third shallow dish,combine the fresh bread crumbs and parmesan cheese.Dip each turkey slice first in the flour mixture,next in the egg mixture and finally in the bread crumb mixture. *5* In a 12-inch skillet over medium heat,melt the butter or margarine.Add the coated turkey slices to the skillet and cook for 2 to 3 minutes on each side or until no pink remains.Transfer the turkey to a serving platter.Garnish with the snipped parsley. --------------------------------------------------------
