Seafood Pasta Salad Makes 5 servings: -------------------------------------------------------- 6-ounces tri-colored rotini pasta 12-ounces seafood including small peeled shrimp,lump crabmeat and/or bay scallops 1-cup broccoli flowerets 1-tomato,chopped 2-tablespoons finely chopped onion 2-tablespoons sliced pitted ripe olives Dressing: 1/3-cup red wine vinegar 1/4-cup olive oil 2-cloves of garlic,minced 1/4-teaspoon salt 1/4-teaspoon sugar 1/4-teaspoon dried thyme,crushed 1/4-teaspoon dried oregano,crushed 1/4-teaspoon dried basil,crushed 1-small bay leaf 2 to 3-cups of mixed greens -------------------------------------------------------- *1* cook the pasta according to the package directions.Drain and rinse with cold water.Drain again. *2* In a large bowl,toss together the shrimp,crabmeat and/or scallops with the cooked pasta.Add the broccoli,tomato, onion and olives;toss. *3* To make the dressing:In a screw-top jar,combine the vinegar,olive oil,garlic,salt,sugar,thyme,oregano,basil and bay leaf.Cover and shake well to combine. *4* Pour the dressing over the salad and toss to coat.Cover and refrigerate for 4 to 24 hours,stirring occasionally.
