PEACH COFFEE CAKE Makes 8 Servings -------------------------------------------------------- Cake: 1/2 cup butter or margarine 1/3 cup sugar 1 teaspoon vanilla 1 egg, beaten 1 1/2 cups all purpose flour 1 1/2 teaspoons baking powder 1/4 teaspoon salt 1/2 cup milk Topping: 1 8-oz can sliced peaches, drained 1/4 cup browned sugar 2 tablespoons melted butter or margarine -------------------------------------------------------- (1) Preheat oven to 350 degrees. Grease an 8x8x2-inch baking pan. (2) To make the cake: In a large bowl, cream the 1/2 cup butter or margarine, sugar and vanilla together with an electric mixer. Add the egg and beat well. (3) In a small bowl, stir together the dry ingredients. Add the dry ingredients to the butter-sugar mixture alternately with the milk. (4) Spread the batter into the prepared pan. Top with the sliced peaches. Sprinkle with the brown sugar and drizzle with the melted butter.
