Chinese Baked Pork Rolls Makes 12 servings -------------------------------------------------------- Marinade: 2-tablespoons soy sauce 2-tablespoons catsup 1-tablespoon sugar 1-tablespoon dry white wine 1-tablespoon vinegar 1-teaspoon cornstarch 1-teaspoon toasted sesame oil 1/8-teaspoon pepper 1-pound pork tenderloin Stuffing: 6-dried mushrooms 4-whole scallions 8-water chaestnuts -------------------------------------------------------- *1* To make the marinade:In a medium bowl,stir together the soy sauce catsup,sugar,white wine,vinegar,cornstarch,sesame oil and pepper. *2* Cut the pork tenderloin crosswise into 12 thin slices. With a meat mallet,pound each piece between sheets of heavy-duty plastic wrap to a 1/4 inch thickness. toss the meat in the marinade and let stand for 15 minutes. *3* Preheat oven to 400 degrees. *4* To make the stuffing:soak the mushrooms in boiling water for 15 minutes.Drain;discard the water and the stems. Thinly slice the mushrooms lengthwise.Using a knife,cut the scallions into thin shreds.Chop the water chestnuts. Stir together the vegitables. *5* Remove the pork slices from the marinade and drain, reserving the marinade.Place 2 tablespoons of the stuffing on each pork slice.Roll the slice of porkaround the stuffing.
