MARINATED CUCUMBERS IN DILL


2 1/2 cups cucumbers; thinly sliced & peeled

1/4 teaspoon salt

1/2 cup white wine vinegar

1/4 cup sugar

3 tablespoons fresh flat-leaf parsley; finely chopped

2 tablespoons water

3/4 teaspoon dried dill

1/4 teaspoon white pepper

1. Place cucumber slices and salt in a large bowl; add water to cover. Let
stand 1 hour; rinse. Drain well; blot dry with paper towels. Combine
vinegar, sugar, parsley, water, dill and white pepper in a large bowl. Add
cucumber; toss gently to coat. Cover and chill at least 4 hours.

Yields 10 servings (Serving size = 1/4 cup)
