TURKEY TORTILLA SOUP
1 package lean, ground turkey
1 tablespoon olive oil
2 (14 1/2 oz.) cans low-sodium chicken broth; defatted
1 (16 oz.) jar mild or medium, thick and chunky salsa
1 cup whole kernal corn; drained
1 tablespoon fresh lime juice
2 to 3 tablespoons fresh cilantro; chopped
2 cups tortilla chips
salt & pepper; to taste
1. Heat olive oil in large saucepan. Add ground turkey; cook over medium heat for 10 minutes. Stir to break up meat. Add chicken broth, salsa, corn and lime juice to saucepan. Stir to combine while bringing to a simmer. Cover and cook for about 10 minutes. Add salt and pepper to taste. Ladle into bowls. Add cilantro. Serve with tortilla chips and wedge of lime.
