TURKEY CALZONE


1 package lean, fresh ground turkey

2 (12 oz.) tubes refrigerated, large biscuits; 10 per tube

1 cup prepared pizza sauce; divided

3/4 cup low-fat ricotta cheese

1 1/4 cups low-fat mozzarella cheese; shredded

cooking spray

Parmesan cheese; to taste


1. Preheat oven to 400 degrees.

2. Cook ground turkey according to package directions. Remove from heat. Stir in 1 cup pizza sauce, ricotta cheese and mozzarella cheese.

3. Place bisquits on lightly floured surface. Flatten each into a large circle. Place dollop of turkey mixture on half of each circle. Lightly moisten edges with water. Fold circles in half to cover turkey mixture. Gently press to seal and enclose filling.

4. Place filled calzones on baking sheet coated with non-stick cooking spray. Bake for 10 to 12 minutes until golden brown and heated through. Serve sprinkled with Parmesan cheese and additional pizza sauce on the side.
