FRESH TOMATO-AND-PEPPER SALAD


2 cups tomato; diced

1 cup green bell pepper; diced

1 cup yellow bell pepper; diced

1 cup onion; diced

1/4 cup fresh parsley; chopped

1/4 cup fresh lemon juice

3 tablespoons capers

2 teaspoons olive oil

1/4 teaspoon salt

1/4 teaspoon pepper


1. Combine all ingredients in a bowl; stir well.

Yields 4 servings (Serving size = 1/4 cup)
