SIMMERED TUSCAN CHICKEN

1 lb boneless, skinless chicken breasts; cut into 1-inch cubes

2 cloves garlic; minced

2 tablespoons olive oil

4 cups potatoes; cut into 1/2-inch cubes

1 medium red bell pepper; diced

1 (27.7 oz.) jar Ragu Old World Style Pasta Sauce

1 lb cut green beans; fresh or frozen

1 teaspoon dried basil

salt & pepper; to taste


1. In a 12-inch skillet, saute chicken and garlic in olive oil until chicken is lightly browned. Add potatoes and peppers; continue to cook about 5 minutes, stirring occasionally. Add sauce, basil, green beans, salt and pepper; bring to a boil.

2. Reduce heat to medium; cover and simmer for 35 minutes or until chicken is thoroughly cooked and potatoes are tender. Stir occasionally.
