SHRIMP-FRIED NOODLES
2 (3 1/2 oz.) packages ramen noodles
1 carrot; thinly sliced
1 red onion; thinly sliced
1 tablespoon ginger root; minced
1 lb raw, medium shrimp; peeled & deveined
1 cup snow peas; halved
2 tablespoons low-sodium soy sauce
1 tablespoon dry sherry
1. Cook noodles in boiling water 2 minutes; drain.
2. Heat oil over medium-high heat. Add carrot, onion and ginger. Stir-fry 3 minutes. Add noodles with 1 of the seasoning packets and snow peas, soy sauce and sherry. Stir-fry 2 minutes.
* NOTE: Use the flavor of the ramen noodles to compliment your protein ingredient. This may be made with chicken strips (i.e. Chicken-Fried Noodles where chicken replaces shrimp).
** CHEF'S NOTE: You can julienne the snow peas and carrots rather than cut them in half for a better presentation.
