COCONUT-RUM FRUIT SALAD


3 cups honeydew melon or cantaloupe; peeled & cubed

3/4 cup kiwifruit; peeled & sliced

1 cup plums; cubed

4 cups peaches or nectarines; peeled & cubed (no need to peel nectarines!)

1 cup strawberries or blueberries; sliced

2/3 cup mango or papaya; peeled & cubed

1 cup banana; sliced

1/2 cup dark rum

1/4 cup fresh lime juice

10 teaspoons flaked sweetened coconut; toasted

1. Combine honeydew or canteloupe, kiwifruit, plums, peaches or nectarines,
strawberries or blueberries, mango or papaya and banana in a medium bowl.
Drizzle rum and lime juice over fruit and toss gently. Sprinkle toasted
coconut over each serving.

Yields 10 servings (Serving size = 1 cup fruit and 1 teaspoon coconut)
