POTATO SKINS WITH CHEESE AND BACON


4 medium baking potatoes (about 2 pounds)

cooking spray

4 slices turkey bacon

3/4 cup reduced-fat sharp Cheddar cheese; shredded

1/4 non-fat sour cream

1 tablespoon fresh chives; minced


1. Bake potatoes at 425 degrees for 1 hour or until done. Cool slightly. Cut each potato in half lengthwise and scoop out potato pulp, leaving a 1/4-inch-thick shell. Reserve pulp for another use.

2. Place potato shells on a baking sheet. Spray inside of shells with cooking spray. Bake at 425 degrees for 8 minutes or until crispy; set aside.

3. Cook bacon according to package directions (microwave is easier), cool slightly. Chop cooked bacon into small pieces and set aside.

4. Sprinkle cheese evenly in potato shells. Bake again at 425 degrees for 5 minutes or until cheese is melted. Sprinkle evenly with bacon. Spoon sour cream onto pototoes; sprinkle with chives.

Yields 8 servings (Serving size = 1 stuffed potato skin and 1 1/2 teaspoon                    sour cream)
