OLD FASHIONED TOMATO SAUCE


2 teaspoons olive oil

1 cup onion; finely chopped

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper; crushed

2 bay leaves

1 clove garlic; minced

1/2 cup water

1/2 cup dry white wine

1/4 teaspoon salt

1/4 teaspoon black pepper

2 (14 1/2-oz.) cans no-salt-added whole tomatoes; undrained and chopped


1. Heat oil in a medium saucepan over medium-high heat. Add onion; saute 4 minutes. Add oregano, basil, red pepper, bay leaves and garlic; saute 1 minute. Stir in water, white wine, salt, pepper and tomatoes; bring to a boil. Reduce heat and simmer 20 minutes.

Yields 4 cups (Serving size = 1/2 cup)

* Chef's Note: You can refrigerate sauce in an airtight container for up to 1 week and use it again.
