HERB-TOMATO SAUCE


1 tablespoon olive oil

1 large clove garlic; minced

2 tablespoons fresh thyme; finely chopped

2 tablespoons fresh flat-leaf parsley; finely chopped

2 tablespoons fresh basil; finely chopped

1/4 teaspoon pepper

1 (28 oz.) can Italian-style tomatoes; undrained & chopped


1. Heat oil in a large saucepan over medium heat. Add garlic; saute 1 minute. Add oregano, thyme, basil, pepper and tomatoes. Bring to a simmer over medium-high heat; cook 25 minutes or until reduced to 2 cups.

Yields 2 cups

* NOTE: Sauce can be made ahead of time and kept covered in refrigerator up to 4 days.
