CHINESE-STYLE CHICKEN IN LETTUCE CUPS
2 tablespoons sesame seeds
1 tablespoon sesame oil
3/4 lb. ground chicken breast
5 cups purchased coleslaw blend (about a 16 oz. package)
1/2 cup purchased lemon stir-fry sauce
4 leaves Boston lettuce
1. In large skillet or wok, cook and stir sesame seeds over medium-high heat for 2-3 minutes or until light golden brown. Remove from skillet; set aside.
2. In same skillet, heat oil over medium-high heat until hot. Add ground chicken; cook 4-6 minutes or until chicken is no longer pink, stirring occasionally to break up.
3. Add coleslaw blend and stir-fry sauce; cook and stir 2-3 minutes or until crisp-tender.
4. To serve, place lettuce leaves on 4 individual plates. Spoon 1 cup mixture into each leaf; sprinkle with sesame seeds.
* NOTE: Ground turkey breast makes a good substitution.
MENU SUGGESTION: Serve with: purchased Wonton soup; breadsticks; iced tea with lemon or hot Jasmine tea and almond cookies or fortune cookies.
