CHICKEN, APPLE AND SMOKED-GOUDA SALAD
1/8 teaspoon salt
1/4 teaspoon pepper
3/4 lb. boneless, skinless chicken breast
cooking spray
8 cups torn prepackaged spinach
3/4 cup red bell pepper; chopped
1/2 cup celery; thinly sliced
1/2 cup red onion; thinly sliced & separated into rings
1 1/2 cups Red Delicious apples (about 1/2-pound); thinly sliced
3/4 cup fat-free honey mustard salad dressing
1/2 cup (2 oz.) smoked Gouda or Jarlsberg cheese; shredded
1/4 cup sliced almonds; toasted
1. Preheat broiler. Sprinkle salt and pepper over chicken. Place chicken on a broiler pan coated with cooking spray; broil 5 minutes on each side or until chicken is done. Cut chicken into 1/4-inch-thick slices.
2. Combine chicken, spinach, bell peppers, celery, onion and apples in a large bowl. Drizzle dressing over salad and toss well. Sprinkle with cheese and almonds.
Yields 4 servings (Serving size = 2 1/2 cups)
