BLUEBERRY PARFAITS

1 cup blueberrries

1/4 cup apricot preserves

1 pint vanilla frozen yogurt

4 tablespoons almonds; slivered (optional)


1. In a small bowl, combine blueberries and preserves. Put mixture in microwave and cook on high 3 to 3 1/2 minutes, stirring twice, until blueberries are softened.

2. Cover and chill until ready to assemble.

3. To serve, in each of 4 dessert or parfait glasses, layer frozen yogurt and blueberry sauce. Garnish with almonds.

Yields 4 servings
