APPLE PANCAKES


1 cup whole-wheat flour

1 cup all-purpose flour

2 teaspoons baking soda

2 teaspoons baking powder

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 dash ground nutmeg

2 cups low-fat buttermilk

1 tablespoon honey

1 tablespoon molasses

1 tablespoon margarine; melted

2 teaspoons lemon juice

2 eggs

2 cups Granny Smith apples; finely chopped

cooking spray


1. Combine whole-wheat flour, all-purpose flour, baking soda, baking powder, cinnamon, salt and nutmeg in a large bowl; stir well. Combine buttermilk and honey, molasses, margarine and eggs in a small bowl; stir well. Add to flour mixture, stirring until smooth. Fold in apples. Let stand 5 minutes.

2. Spoon about 1/4 cup batter for each pancake onto a hot, non-stick griddle or skillet coated with cooking spray. Turn pancakes when tops are covered with bubbles and edges look cooked.

Yields 14 pancakes (Serving size = 2 pancakes)
