TARRAGON-YOGURT DRESSING


1 cup nonfat plain yogurt

1 clove garlic; peeled

1/4 teaspoon salt

salt; to taste

1 1/2 teaspoons extra-virgin olive oil

1 teaspoon tarragon; chopped fresh

pinch of cayenne pepper

1. Line a sieve with a double layer of cheesecloth or paper towels and
place over a bowl. Spoon in yogurt and drain at room temperature for 25
minutes.

2. With the side of a chef's knife, mash garlic with 1/4 teaspoon salt.
Transfer to a small bowl; whisk in drained yogurt, oil, tarragon and
cayenne. Adjust seasoning with salt.

Yields 3/4 cup (Serving size = 1 tablespoon)
