LEMON-HERB MARINADE


2 teaspoons lemon rind; grated

2/3 cup fresh lemon juice

1/4 cup fresh basil; chopped

1/4 cup fresh mint; chopped

1/4 cup white wine vinegar

2 tablespoons fresh oregano; chopped

1 1/2 tablespoons olive oil

1/4 teaspoon salt

2 cloves garlic; crushed

1. Combine all ingredients and stir marinade well.
