CITRUS VINAIGRETTE


1 tablespoon orange peel; finely shredded

1/3 cup orange juice

1/4 cup white balsamic vinegar or balsamic vinegar

2 tablespoons onion; finely minced

1 tablespoon snipped parsley

1 tablespoon snipped fresh basil

1 tablespoon snipped fresh mint

1/8 teaspoon salt

1. Combine orange peel, orange juice, vinegar, onion, parsley, basil, mint
and salt in a screw-top jar. Cover and shake well. Refrigerate until
serving time.

Yields 1 cup
