An innovative way to eat this vegetable. Laced with cumin,
garlic and garam masala, this dish is best eaten with roti
or plain rice.
Ingredients
3 medium sized zucchinis, chopped into small pieces
5-6 garlic cloves
1 small piece ginger, crushed finely
1 tsp mustard seeds
1 tsp cumin seeds
10 green chillies, slit
1 1/2 tsp garam masala powder
Salt to taste
1 tsp lime juice
2 tbsp coriander leaves, chopped
2 tbsp cooking oil

Method
Heat the oil and add the mustard and cumin.
After 30 secs, add ginger, garlic and green chillies.
When the garlic turns brown, add the chopped
zucchini, salt to taste and the coriander leaves.
Do not sprinkle water as this vegetable oozes out water
as it boils.
Cook covered on medium heat till the vegetable is done.
Now add the garam masala and the lime juice
and cook uncovered on high heat, stirring
continously for about 2 minutes.
Remove from heat and eat when hot.
Preparation : 10 minutes
Cooking: 15 minutes
