Pancakes made with rice flour and other spices, these make
a great breakfast dish when served with hot coconut chutney.
Ingredients
3-4 cups of rice flour
8 green chillies, minced finely
1/4 cup coriander leaves, minced
1/4 cup dill leaves, minced
1 large onion, minced
Salt to taste
Cooking oil or ghee for making the pancakes

Method
Mix together the minced onions, chillies,
coriander and dill leaves.
Mix in salt to taste.
Set aside.
For each pancake:
Take about one half a palmful of the above mixture.
Add about twice this amount of rice flour.
Adding water gradually, make a smooth dough
in the shape of a round.
Grease a thin square/round large plastic sheet 
with a little butter or oil.
Place the dough in the center of the sheet and
with the palms, press down on the dough to form
a thin circle about 7 or 8 inches in dia.
Grease a tava(griddle) with some oil and
gently flip over the plastic sheet and with the
fingers ease the roti onto the tava.
Cook on both sides till done.
Repeat for the rest of the dough.
Eat with hot coconut chutney.


Preparation : 20 minutes
Cooking: 3-4 minutes for each roti
