Ingredients
1 large BOBOLI thin crust
1/2 tbsp olive oil
2 cups shredded mozzarella
Sauce:
1 onion, chopped
1 1/2 tbsp olive oil
7 large tomatoes, chopped
1 large pod garlic, peeled and chopped
10 small fresh mint leaves, chopped
2 tbsp fresh coriander leaves, chopped
1 large stick cinnamon, broken into small pieces
5 cloves
2 tsp red chilli powder
1/2 tsp dhania-jeera powder
Salt to taste
Toppings:
1 large capsicum (green bell pepper), cut into thin rounds
2 jalapenos, cut into thin rounds
1 small onion, cut into thin slices
Method
Brush 1/2 a tablespoon of olive oil on the crust
set aside.
Heat the remaining olive oil and add the garlic,
onions,cinammon and cloves.
When the garlic starts browning, add the mint leaves for
fry for 2 minutes.
Then add the tomatoes and continue frying for about
10 minutes.
Now add the coriander leaves and fry for another few
minutes.
Add the dry powders and salt to taste.
Fry for 30 seconds.
Take it off the stove and cool.
Blend to a smooth paste.
This is the pizza sauce.
Spread this over the crust.
Sprinkle mozzarella on top.
Cover with toppings.
Bake in a oven pre-heated to 400 deg Fah till the crust is crisp
and the cheese melts.
Cut into slices and serve.
